– 10 tortillas
– Malena’s Mole de Xico Sauce
– Shredded Chicken
– Vegetable oil (preferably spray)
– Feta Cheese
– Sour Cream
– Onion in slices (optional)
– Avocado Slices (Opcional)
Spray a bit of vegetable oil in a flat pan on medium heat. Wait for the pan to be hot, place the tortillas
and heat them for around 1 minute on each side or until they can be easily folded.
Add the chicken to the tortilla and roll it to a tight taco.
Place the tacos on a plate, and prepare the Mole de Xico sauce as per instructions.
(Mole sauce is made by adding a cup of chicken stock in a deep pan on medium heat, water, and one jar of Mole de Xico. Stir until you get to mix the mole with the chicken. You will get a
creamy texture. Add more chicken stock if necessary.)
Top the tacos with the Mole sauce until you have covered all the tacos, topped with feta cheese, and add some
slices of onion, slices of avocado and sour cream.
*You can make a vegetarian version, switching the chicken for tofu or your favourite choice.
